Kinki, also known as Broadbanded Thornyhead, is a highly prized fish caught off the coast of Hokkaido, Japan. Known for its striking crimson color and high fat content, it’s considered a delicacy, particularly when prepared using traditional Japanese methods like boiling with soy sauce. The majority of the fish come from the Okhotsk area, particularly Abashiri city, where they are caught using the longline method, ensuring minimal damage and peak freshness. Only four fishing boats in the area employ this method, making Tsuri Kinki a luxury in high demand.


Preparation
Perfect for boiling in soy sauce to bring out its rich fat content. It can also be grilled or served sashimi style, showcasing its sweetness and delicate texture.
