Availability/Seasonality
Our Honmaguro is sourced from Japan's top aquaculture regions, ensuring availability year-round. The quality remains impeccable throughout the year, with peak flavor during the colder months, when the tuna’s fat content is at its highest.

About
Honmaguro, or Pacific Bluefin Tuna, is widely considered the pinnacle of tuna in Japanese cuisine, often reserved for the finest sushi and sashimi experiences. This AAA+ grade tuna hails from Japan's most renowned farming regions, including Ehime, Uwajima, Nagasaki, Takashima, and Kagoshima. Each cut offers a distinct experience, from the luxurious, marbled Otoro (fatty belly) to the leaner Akami (red meat). These cuts are sourced from tuna weighing over 100kg, ensuring each slice contains an exquisite blend of flavors and textures.

Our Honmaguro selection includes:

  • Harakami: The cut closest to the collar, rich with the highest concentration of Otoro, Chu Toro, and a touch of Akami. The ultimate indulgence for toro lovers.
  • Haranaka: The mid-belly section, showcasing a balanced mix of Otoro and Chu Toro, offering a slightly firmer texture with the same rich, buttery flavor.
  • Senaka: The back cut of the middle section, primarily Chu Toro with some Akami, providing a leaner yet equally satisfying flavor profile.
  • Sekami: The back part near the head, offering a delightful combination of tender Akami and Chu Toro, perfect for those who appreciate a firmer bite.
  • Harashimo & Seshimo: These lower cuts have less fat but offer a robust umami flavor, making them ideal for those who enjoy the pure essence of tuna.

Preparation
Honmaguro is versatile and shines in various preparations. Savor it raw as sushi or sashimi to experience its true flavor. Light searing enhances the buttery richness of Otoro, while leaner cuts excel in tekka maki, negitoro, or lightly seasoned ceviche. The beauty of this tuna lies in its adaptability across different culinary styles.

Nutritional Value
Bluefin tuna is a nutrient-dense seafood, rich in omega-3 fatty acids, high-quality protein, vitamins, and minerals. The fattier cuts, such as Otoro and Chu Toro, provide a higher omega-3 content, while the leaner Akami offers a lean source of protein without compromising on flavor.

Selection and Storage
When selecting Honmaguro, look for vibrant color and a delicate marbling pattern, indicating freshness and premium quality. Store it chilled and consume within 2-3 days for optimal flavor. For extended storage, wrap tightly in plastic and freeze to preserve its taste and texture.
